    Lily Wallace New American Cookbook 1945


    Recipe Introduction


    The plain pastry called for by the Lily Wallace recipes.


    List of Ingredients


    • 2 cups flour
    • 3/4 tsp salt
    • 2/3 cup shortening


    Instructions


    1. Mix and sift the flour and the salt.
    2. Cut the shortening in with a knife.
    3. Add only enough water to hold the ingredients together. Do NOT knead.
    4. Divide the dough into two parts and roll out on a slightly floured board.
    5. Line pan with 1/2 pastry.
    6. Pinch pastry to make fancy edge and prick bottom and sides with fork. Bake in a very hot oven [460F] 10 to 15 minutes.
    7. For a two crust pie, line pie, put in filling, cover with top and bake as directed.
    8. If you desire a less rich pie only use 1/2 cup shortening.
    9. Yields two pastry shells.
    10. You may also use Flaky pastry where this is called for.
