    A beef casserole


    List of Ingredients


    • 1 large onion, chopped
    • 1 tbsp fat
    • 2 tsp flour
    • 1 [#2] can tomatoes, chopped [if I had to learn can sizes so do you]
    • 1/2 tsp salt
    • 1/8 tsp pepper
    • 1 bay leaf
    • 4 cups cubed roast beef
    • 12 large prunes
    • 6 to 8 very small potatoes [like creamers]


    Instructions


    1. Start oven to 375F
    2. Cook onion in fat in metal based casserole until golden.
    3. Blend in the four and then add tomato, seasonings and beef. Stir to mix well. Simmer 10 minutes
    4. Stuff prunes with pieces of boiled potatoes. Add remaining potatoes and remaining prunes to beef mix. Top with stuffed prunes. Cover.
    5. Bake for 30 minutes. Uncover bake 10 more.
