    Tom Yum Gai-Coconut Chicken Hot and Sour

    Recipe Introduction


    This takes about 15 minutes to put together and is really good.


    List of Ingredients


    • 1 1/2 cans coconnut milk
    • 3/4 lb chicken breast filet, sliced into thin strips
    • 1 cup shitake mushrooms, sliced thin, no stems
    • 2 1/2 -3 tbspns lime juice
    • bunch of cilantro
    • 1 stalk lemon grass
    • 4-5 chili peppers (thai)
    • 1 tspn sugar
    • 3 tbspns fish sauce


    Instructions


    1. Cut lemon grass into 4 pieces and smash with side of cleaver, rolling pin, anything to bruise pieces well. Cut chili peppers in half, or bruise like lemongrass.
    2. Heat 1 can coconut milk to boil. Reduce heat to medium low. Add lemon grass, chicken and fish sauce. Stir until chicken is done, about 3 minutes.
    3. Add rest of coconut milk and 1/2 cup water. Add mushrooms and bring to boil.
    4. Add lime juice, sugar and chili peppers. Stir until heated through.
    5. Remove from heat and garnish with lots of chopped cilantro.


    Final Comments


    If it is too hot, add rest of coconut milk to adjust.
