    Anise Cookies

    List of Ingredients




    8 cups sifted flour 1-1/2 cups shortening
    1 cup sugar 3 eggs
    3 tblsp. baking powder 1 cup milk, approx.
    1/4 tsp. salt 1-1/2 tsp. vanilla extract
    1-1/2 tsp. anise flavoring

    Recipe




    sift flour, measure, and resift with sugar, baking powder and salt. Cut in
    shortening with fingers until mixture resembles corn meal. Make a well in
    flour, and break eggs into it. Add half of milk and both flavorings. Knead
    well for 5 minutes, adding the balance of milk as you knead. Add only
    enough milk to make a medium soft dough which is easy to handle.

    (For Filled Cookies)
    Roll each portion of the dough into circular sheets 1/8 inch thick and cut
    into
    various shapes. Cut two shapes of each cookie. Place 1 rounded tablsp. of
    filling on one cookie, then cover with another cookie. Make a 1/4 in. slit
    in
    the top cookie with a sharp knife, moisten the edges of the bottom cookie
    with cold water and press the 2 together with the tines of a fork. Make 1/8
    in. slits all around the edges about 1/4 in. apart. Bake on greased cookie
    sheet in moderate oven 375° until light brown - 18 to 25 minutes. Remove
    from oven and frost while hot. Makes 10 dozen cookies.

    Or --- (the way we used to do it)
    Separate the dough into 3 sections. Add green food coloring / Add red food
    coloring / Leave one white. Shape into various sizes and shapes. Bake in
    moderate oven 375° - 10 minutes until lightly brown. Ice.

    Filling
    1/2 lb. pulled figs 1/4 cup honey
    1/2 lb. seedless raisins Pinch of pepper
    1 strip orange peel (2" long) 1/4 tsp. cinnamon
    1/4 lb. sweet chocolate 1/4 tsp. ground allspice
    1/4 lb. chopped candied fruit

    Put figs, raisins, orange peel, and chocolate through food chopper, using
    medium blade. If ingredients stick in the grinder, add 1 tsp. cold water.
    Add
    honey, spices and fruit to mixture and blend well.

    Frosting
    3 cups confectioners sugar 1 tblsp. vanilla ( or anise)
    3 tblspn. melted butter 1/4 cup barely lukewarm
    milk

    Combine all ingredients and blend well. Add a little more milk if necessary.

    Frost cookies and then sprinkle with colored sprinkles (if desired).
