    Recipe Introduction


    Agnes and I worked together at the Wisconsin Dept. of Revenue.
    This was one of my mothers favorite desserts.


    List of Ingredients


    • 60 Ritz Crackers (crush fine)
    • 1/2 c. butter (melted)
    • 2 pkg. coconut or vanilla instant pudding mix
    • 1 1/2 c. milk
    • 1 qt. Buttered Pecan ice cream (softened)
    • 1 lg. container Cool Whip


    Instructions


    1. Mix melted butter and cracker crumbs together. Put 3/4 of the crumbs in a 9x13 pan and press down.
      Beat pudding mix and milk 2 minutes. Add softened ice cream. Add Cool Whip. Pour over crust and sprinkle remaining crumbs on top. Refrigerate several hours or over night. This may also be frozen.
