    Tuna Curry

    Recipe Introduction


    This recipe was inspired by a casserole made at school in home economics and one a friend used to cook. Combine the two together, tweak and you have my recipe!


    List of Ingredients


    • 1 large can of tuna
    • 2 tablespoons of plain flour
    • 1 teaspoon of curry powder (this makes it mild, add more if you wish)
    • 2 tablespoons of margarine or butter
    • 2 cups of milk
    • 1 can of crushed pineapple in juice


    Instructions


    1. Drain the tuna and pineapple.
    2. Melt the butter in a medium saucepan with the curry powder, add the flour to make a roux. Cook it out for about a minute and then gradually add milk to avoid lumps. Allow the sauce to bubble for about a minute to cook out the flour.
    3. Add the drained tuna and pineapple. Stir together until the tuna and pineapple are heated through.
    4. Serve over a bed of rice.
