    • 1 LG ONION (CHOPPED)
    • 2 CLOVES GARLIC (CHOPPED)
    • 3 RIBS CELERY (CHOPPED)
    • 1/3 CUP OLIVE OIL
    • 1 - 12 OZ CAN TOMATO PASTE
    • 3 TBSP SUGAR
    • 3 CUPS WATER (MORE IF NEEDED)
    • 1 - 15 OZ CAN TOMATO PUREE OR 2 - 14 OZ CANS WHOLE TOMATOES (CHOPPED)
    • 1 TSP EACH - SALT, PEPPER, ITALIAN SEASONING


    Instructions


    1. IN LARGE HEAVY POT, COOK ONIONS, GARLIC AND CELERY IN OLIVE OIL UNTIL SOFTENED.
    2. ADD TOMATOE PASTE AND SUGAR. COOK CONSTANTLY UNTIL MIXTURE BEGINS TO HOLD TOGETHER AND IS A NICE RICH COLOR - ABOUT 30 MINUTES
    3. ADD THREE CUPS WATER AND COOK DOWN UNTIL SAUCE THICKENS SLIGHTLY.
    4. ADD PUREE OR TOMATOES AND OTHER SEASONINGS. COOK COVERED OVER LOW HEAT FOR ONE HOUR.
    5. ADD MORE WATER IF THE GRAVY GET TOO THICK OR STARTS TO STICK. STIR EVERY SO OFTEN AS THE MIXTURE SIMMERS.
    6. SERVE OVER PASTA, PREFERABLY ANGEL HAIR.
