    List of Ingredients




    3/4 c chopped onion
    ½ c chopped celery
    ½ c chopped bell pepper
    1 T melted margarine
    1 – 10 ¾ oz can chicken broth
    ¼ c plus 1 T tomato paste
    1 ½ T lemon juice
    ¼ t Worchestershire sauce
    1/8 t pepper
    1 lb peeled crawfish tails
    Cajun spice to taste
    2 c hot cooked rice

    Recipe



    Saute onion, celery and bell pepper in margarine, until tender. Add chicken broth, tomato paste, lemon juice, Worcestershire sauce and pepper. Cook over medium-high heat, stirring until smooth and bubbly. Add Cajun spice and crawfish tails and simmer 5 minutes or until mixture is heated. Serve over hot cooked rice.
