    Gougeres "French Cheese Ring"

    List of Ingredients


    • 1 1/2 cups water
    • 9 Tbsp. butter
    • 2 tsp. salt
    • 1 1/2 cups sifted flour
    • 6 eggs, beaten
    • 2 cups swiss cheese, grated
    • 1 egg beaten, for glazing


    Instructions


    1. Preheat oven to 400 degrees.
    2. Bring the water, butter and salt to a boil in a saucepan. When the butter has melted, remove the pan from heat and vigorously beat in all the flour at once. Continue beating until flour is totally incorporated.
    3. Return saucepan to moderate heat. Beat constantly with a wooden spoon until the dough forms a ball and comes away from the sides of the pan (about 2-4 minutes).
    4. Remove saucepan from the heat. Beat in the eggs alitttle bit at a time, making sure each addition is well incorporated before adding the next. Gradually beat in the grated cheese.
    5. With moist hands, form the dough into a sausage roll and twist the roll into a ring.
    6. Place on a greased cookie sheet, make a few slits on the surface of the dough with a knife. To glaze-brush with the beaten egg.
    7. Baake 30-35 minutes, until the cheese pastry is golden brown on the outside and has puffed up. (Do not open the oven door during baking.)
    8. Slice and serve immediately as an appetizer.
    9. Serves 4 to 6.
