List of Ingredients
- 1/2 lb bacon
- 2 lb potatoes
- 1 md onion, diced
- 1/2 tsp salt
- 1/4 tsp pepper
- 12 eggs
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 1/2 C (6 oz) chedder cheese, shredded
- salsa or ketchup, opt
Instructions
- Cook bacon in large skillet until crisp. Remove and drain on paper towel. Crumble and set aside.
- Reserve 2 T drippings and use to saute potatoes, onion, salt and pepper until browned.
- Whisk together eggs, salt and pepper; pour over potatoes.
- Cook until eggs are set, stirring as needed.
- Sprinkle with bacon and cheese.
- Serve with the salsa or ketchup
