    List of Ingredients


    • 1/2 lb bacon
    • 2 lb potatoes
    • 1 md onion, diced
    • 1/2 tsp salt
    • 1/4 tsp pepper
    • 12 eggs
    • 1/2 tsp salt
    • 1/4 tsp pepper
    • 1 1/2 C (6 oz) chedder cheese, shredded
    • salsa or ketchup, opt


    Instructions


    1. Cook bacon in large skillet until crisp. Remove and drain on paper towel. Crumble and set aside.
    2. Reserve 2 T drippings and use to saute potatoes, onion, salt and pepper until browned.
    3. Whisk together eggs, salt and pepper; pour over potatoes.
    4. Cook until eggs are set, stirring as needed.
    5. Sprinkle with bacon and cheese.
    6. Serve with the salsa or ketchup
