    Recipe Introduction

I have a great and easy dessert recipe! It's also great as a christmas gift

    List of Ingredients

1 15.6oz pkg. Pillsbury Cranberry Quick Bread Mix
    1/2 cup butter, melted
    2 eggs, slightly beaten
    1/2 cup white vanilla chips
    2-5 TB flour

    Recipe

    1. Heat over to 350 F. Spray cookie sheet with nonstick spray or line with foil.

    2. In a large bowl combine bread mix, butter and eggs. Stir 50-75 times with spoon until mix it moistened. Dough will be sticky.

    3. Sprinkle work surface with some flour. Place dough onto surface. Roll dough into ball, adding flour as necessary to prevent sticking. Divide dough in half, place on sprayed cookie sheet. Form each half into a 9x3inch loaf (can vary this) placing about 4 inches apart. Flatten tops slightly and sides to get a rectangle shape.

    4. Bake at 350 F for 23 - 30 min or until light golden brown. I found that after 10 min or so, I just constantly check it every now and then. Remove from oven and left cool 15 minutes.

    5. On cutting board, cut each loaf into 3/4 inch crosswise slices. Cut at an angle to make biscotti pieces. If this is complicated, just type "biscotti" into google and you'll see more directions and pictures. Place slices upright and 1 in apart on same cookie sheet.

    6. Return to oven and bake an additional 8 min and then remove. Flip pieces to other side and bake another 8 minutes or so. Keep checking oven. Biscotti is ready when it appears golden brown. Remove from oven.

Variations: Can add vanilla chips in step 2. Or I melted them and used an icing decorator bag to pipe the white chocolate onto the biscotti making it really pretty. You can also add your favorite nut or chocolate chips too.

Yields 24 cookies...but I always get different amounts!
