    Banana and Mixed Berry Shortcakes

    4 tablespoons butter
    3 bananas, sliced
    3 cups of fresh berries, such as blueberries, blackberries,
    raspberries, halved strawberries
    1 cup sugar
    For serving: 4 warm biscuits
    Garnish: Whipped cream, about 3 cups
    Garnish: Powdered sugar, about 2 tablespoons

    1. Melt butter over medium-high heat in large skillet. Add bananas
    and cook about 3 minutes on high heat, tossing occasionally.
    2. Add sugar and berries; sauté an additional 2 minutes.
    Presentation: Cut biscuits in half horizontally with serrated knife.
    Place 2 halves on each of 4 dessert plates, cut-side up. Top with
    warm fruit mixture and whipped cream. Sprinkle with powdered sugar.

    Yield: 4 servings

    Nutritional information (per serving without biscuit): 435 calories,
    1.7 grams protein, 85.3 grams carbohydrates, 12.3 grams fat, 25
    percent calories from fat, 31 milligrams cholesterol, 125 milligrams
    sodium
