    Rhubarb and Cinnamon Cake:

    60g butter
    1 tsp. salt
    300g brown sugar
    1 tsp. cinnamon
    2 eggs
    500g rhubarb, sliced into 2cm pieces
    1 tsp. vanilla
    grated rind 1 lemon
    300g flour
    250 ml sour cream
    1 tsp. bicarb soda

    Cake topping : 80g brown sugar, 1 tsp. cinnamon...mixed together.
    Beat butter with brown sugar. Add eggs and vanilla.Stir in sifted
    flour, soda, salt & cinnamon. Add rhubarb, rind & sour cream. Stir
    with a wooden spoon. Spoon into a buttered and floured 22-25cm cake
    tin. Sprinkle with the mixed topping. Bake in a pre-heated 180C oven
    for 50-60 min. Serve with whipped cream... and feel better instantly
