    Posh Squash Casserole

    List of Ingredients

    This isn't squash dressing, but it's a delicious casserole that I hope you will enjoy.

    2 lbs. yellow squash
    1 small onion, chopped
    1 c. mayonnaise
    1 c. freshly-grated Parmesan cheese
    2 eggs
    1/2 tsp. salt, + extra for cooking water
    1/4 tsp. pepper
    1/2 c. plain breadcrumbs
    butter or margarine

    Wash & trim squash. Cut into slices approx. 1/4" - 1/2" thick. Put into a pot with enough lightly-salted water to cover. Bring to a boil and then allow to cook for 10 minutes. Drain **well**.

    In a large mixing bowl, beat two eggs until frothy. Add chopped onion, grated cheese, mayo and s&p, stirring well.

    Gently fold mayo mixture into drained squash. Pour into a lightly-greased casserole dish. Top with breadcrumbs and dot thin slivers of butter or margarine over all. Bake, uncovered, at 350 degrees for 30 minutes.
