    Citrus Butter

    Peel (zest) of 1 orange, colored part only
    Peel (zest) of 1 lemon, colored part only
    Peel (zest) of 1 lime, colored part only
    1 tablespoon minced fresh mint
    2 to 2 1/2 tablespoons honey
    1/4 cup Triple Sec
    1 pound (4 sticks) butter, softened

    1. Blanch zest in rapidly boiling water 10 seconds; drain and
    submerge zest in ice-cold water. Drain. Repeat process. Mince zest.
    2. In mixing bowl, combine zest with mint, honey, Triple Sec and
    butter. Refrigerate, well-sealed. Serve with warm biscuits. Citrus
    Butter will last 3 weeks in refrigerator or 3 months in freezer.

    Yield: About 2 1/3 cups

    Nutritional information (per 1-tablespoon serving): 98 calories, 0.1
    grams protein, no carbohydrates, 9.9 grams fat, 91 percent calories
    from fat, 27 milligrams cholesterol, 102 milligrams sodium
