    Louisiana Mayonnaise

    List of Ingredients





    2 egg yolks
    Salt and freshly ground black pepper to taste
    2 tsp Dijon mustard
    2 tsp vinegar or fresh lemon juice
    2 cups olive oil

    Place egg yolks,salt, pepper, mustard, vinegar or lemon juice in a mixing bowl and beat vigorously for a few seconds with a wire whisk or electric mixer. Begin adding oil very slowly, beating constantly. Continue beating and adding oil slowly until all oil has been used. This makes about 2 cups and the recipe can be halved. You can also make this in a blender. To this basic recipe, they add different spices or herbs according to the way it is being served.
