    CORAL ISLANDS

    2/3 cup margarine
    1/3 cup brown sugar
    1 teaspoon almond extract
    1 egg, separated
    1 1/3 cups all-purpose flour, sifted, approximately
    Strawberry or raspberry preserves, about 1 cup
    1/2 cup finely chopped walnuts

    Preheat oven to 350 degrees. In a mixing bowl, cream margarine and
    sugar with an electric mixer. Add egg yolk and extract and beat well.
    Add flour gradually and blend well. After you've used 1 1/3 cups
    flour, test to see if dough is pliable but not too sticky. Add more
    flour if needed. Shape dough into 1-inch balls. Beat egg white so
    that it is still slightly runny. Put walnuts in a bowl nearby. Dip
    half of each ball into the egg white. Then dip into the nuts. Place
    on a cookie sheet, nut side up, and make a depression with your thumb
    just deep enough to hold a little less than 1/2 teaspoon of preserves.
    Fill depression with preserves. Bake 15-20 minutes.

    Makes 3 dozen cookies.
