Dark Chocolate Waffles

1/2 cup butter, melted
1/4 cup sugar
2 eggs, separated
1/2 teaspoon vanilla extract
3 ounces bittersweet or semisweet chocolate, melted and cooled
1 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt (optional)
1/2 cup milk or 3/4 cup buttermilk
Confectioners’ sugar to taste
Fresh strawberries, sliced and sweetened to taste
In a bowl of an electric mixer, beat butter and sugar. Add egg yolks, vanilla and cooled chocolate. Mix well.

In a separate bowl, mix together flour, baking powder and salt.
Add flour mixture to the chocolate mixture alternately with the milk, blending well after each addition. (If using buttermilk, which is a little thicker than milk, add a little more, if necessary, to thin almost to the pouring consistency.)
With an electric mixer, beat egg whites until stiff. Fold them into the batter.
Place about 1/3 cup batter in hot waffle iron (sprayed with a nonstick spray), close the cover and bake until the steaming stops.
These waffles are dark, so don’t judge doneness by the color.
Serve sprinkled with confectioners’ sugar and topped with strawberry slices to taste.
Note: Not too sweet, these waffles can be topped with sweetened whipped cream or a variety of fruits and syrups, and they will double as dessert fare.
Makes 3 2-waffle servings.
