    VEGETARIAN DELIGHT
    Serves: 4

    INGREDIENTS:
    - 1 medium avocado, peeled and mashed
    - 1 tablespoon lemon juice
    - 1/4 teaspoon Morton Lite Salt Mixture
    - 1/8 teaspoon pepper
    - 1 clove garlic, minced
    - 1 green onion, minced
    - 1/4 cup celery, minced
    - 4 slices whole wheat bread
    - 2 large mushrooms, sliced
    - 1/2 cup alfalfa sprouts
    - 1 medium tomato, sliced
    - 4 thin slices (1 oz. each) fat-free Swiss cheese

    DIRECTIONS:
    1. Mix avocado, lemon juice, Morton Lite Salt Mixture,
    pepper, garlic, green onion and celery. Spread 1/4 of mixture
    on each slice of bread.
    2. Arrange mushrooms over avocado mixture. Top with
    alfalfa sprouts, tomato slices, then cheese. Broil
    sandwiches until cheese barely melts - about 2 minutes.
