CAMARONES al MOJO de AJO ( Garlic Shrimp)
36 Shrimp (35-50 count) medium, unshelled
1/2 cup Chopped onion
4-6 Serrano chiles chopped
1/2 cup Cilantro chopped
2 tsp Salt
2 tsp Lime juice
Turn the shrimp over and split down the middle without
breaking in half. If possible, remove the vein. Set aside.
In a blender, puree the whole garlic cloves, salt, pepper
and vinegar.
Marinate the shrimp in this puree for 30 to 45 minutes.
Heat the butter and olive oil in a skillet. Add the minced garlic.
Sauté until golden, 3 minutes or so. Don't burn the garlic.
Then add the shrimp with the shell side up.
Reduce the heat, cover and cook for 2 to 3 minutes, or until
shrimp are opaque.
Sprinkle the limejuice over the dish and remove from heat and serve.
The recipe should serve 4 to 6 persons.
However, maybe only 3 to 5 if I am eating too.
I do love this dish.
BTW, you can prepare almost any white fleshed fish
with this same recipe and it will taste as good as the shrimp does.
