SEARED SCALLOPS WITH AVOCADO SALAD

SEARED SCALLOPS WITH AVOCADO SALAD
based on a recipe in One Pot Wonders, by Conrad Gallagher
2 avocados, peeled, pitted and diced, divided
juice of 1 lemon
juice of 1 lime
salt and pepper to taste
1-1/2 cups chopped cilantro leaves, divided
1 clove garlic, minced
2 small, red fresh chiles, such as cayenne or aji,
seeded and diced, divided
1 cup chopped chives
2 Tbsp. butter
1 Tbsp. olive oil
12 fresh sea scallops
2 Tbsp. coconut milk
For guacamole, mix half of the avocado with the lemon and lime
juices, salt and pepper in a small bowl. Set aside. In a food
processor, blend 1 cup of the cilantro, the garlic, half of the
chiles and the chives. Add prepared avocado. Process
several seconds to desired texture.
In a small saute pan, heat the butter and oil. Season the
scallops with salt and pepper, then sear for 1 minute per side.
Make avocado salad by combining remaining avocado,
remaining chile and remaining 1/2 cup cilantro in a bowl.
Serve scallops with spoonfuls of guacamole and avocado salad.
Drizzle plate with coconut milk. Garnish with additional sprigs
of cilantro. Makes 4 servings. Recipe
