Shrimp Christine
2 large red peppers
1/2 cup roasted almond slivers
3 tablespoons olive oil
16 large shrimp, peeled, deveined and washed
2 teaspoons Cajun spice
4 cloves garlic, peeled and chopped
1 bunch fresh basil, chopped
Roast peppers over an open flame until completely black. Place in an
ice bath and peel. Cut into julienne slices and set aside.
Roast almonds under broiler (we toasted them in 1 tablespoon olive
oil in a skillet on top of the stove) and set aside.
Heat olive oil in a large saute pan. Dust shrimp in Cajun spice and
cook approximately 2 minutes on medium heat. Add roasted pepper,
garlic and almonds. Flip shrimp, reduce heat to simmer, and continue
cooking until pink. Add basil just before serving. Serves 4 as an
appetizer or 2 as an entree.
