    Mama Pick's Dinner Rolls

    Mama Pick's Dinner Rolls
    2 cups milk
    1/2 cup sugar
    1/2 cup shortening
    1 (1/4-ounce) envelope active dry yeast
    1/4 cup warm water (105° to 115°)
    61/2 cups all-purpose flour, divided
    1/2 teaspoon baking powder
    1/2 teaspoon baking soda
    1 teaspoon salt

    Combine first three ingredients in a saucepan; heat until shortening melts, stirring occasionally. Cool to 105° to 115°.

    Combine yeast and warm water in a 1-cup liquid measuring cup; let stand 5 minutes. Combine milk mixture, yeast mixture and 2 cups flour in a large mixing bowl; beat at medium speed of an electric mixer until well blended. Gradually stir in 2 cups flour.

    Cover and let rise in a warm place (85°), free from drafts, for 45 minutes or until double in bulk.

    Combine 2 cups flour, baking powder, soda and salt in a large mixing bowl; add yeast mixture.

    Beat at medium speed until well blended.

    Sprinkle remaining 1/2 cup flour evenly over work surface. Turn dough out into floured surface, and knead until smooth and elastic (about 5 minutes). Roll dough in 1/4-inch thickness; cut into rounds with a 2-inch biscuit cutter. Fold rounds in half, gently pressing edges to seal.

    Arrange rolls in four greased 9-inch round cakepans. Cover and let rise in a warm place, free from drafts, 45 minutes or until double in bulk. Bake at 400° for 10 to 12 minutes or until golden. Yield: 5 1/2 dozen.
