    Mad Cow Eggs

    MAD COW Eggs
    1 serving

    Ingredients:

    3 eggs, beaten
    cheddar cheese, shredded
    jalapenos, diced
    salsa - medium or hot
    onions, diced
    sour cream
    corn bread (one or two square pieces)

    Prepare eggs as you would any scrambled egg recipe. While cooking, mix in cheese,
    jalapenos, salsa, and onions. Cook until firm. Serve hot over one or two square pieces of
    cornbread (freshly made is best). Top with cheese, sour cream, and salsa (warmed up).
