    Muffin Pan Buffet Salads


    List of Ingredients


    • 6 oz gelatin, lemon flavor
    • 1/2 tsp salt
    • 1/2 tsp garlic salt
    • 3 cups boiling water
    • 1 tbs vinegar
    • 2 tsp salad oil
    • 4 dashes black pepper [if using fresh ground adjust accordingly]
    • 4 dashes oregano
    • Salad ingredients [see suggested to get you started then party!]


    Instructions


    1. Dissolve gelatin, salt, and garlic salt in boiling water. Add vinegar, oil, pepper, and oregano. Put foil cupcake liners in muffin pans. Place one of the salad ingredients in each filling about 2/3 full. Then fill with gelatin.
    2. Chill until firm approx 2 hours. Unmold carefully. Serve with crisp salad greens [opt]

    16 to 20 servings.

    Suggested ingrients:

    Flaked drained tuna with capers and chopped chives [or crab]
    Cauliflower florets and diced pimientos
    Sliced celery with chopped pickles or olives
    Cucumber and tomato slices
    Sliced hard cooked eggs with anchovys
    Drained canned button mushrooms with pimento strips
    Sliced pickles with shredded cabbage
    Cooked cut green beans wih cubed cream cheese
