SPECULAAS
(Spicy Dutch Cookies)

grated rind of 1 lemon
1 1/2 sticks margarine or
butter
1/2 c. white sugar
1/2 c. brown sugar
2 1/4 c. white flour
1 tsp. baking soda
1 1/2 tsp. ground nutmeg
1 1/2 tsp. cinnamon
1 1/2 tsp. ground coriander
3/4 tsp. ground cloves
1/4 tsp. white pepper
1 tsp. salt
2 Tbsp. milk
1/2 c. slivered almonds
(optional)

Cut margarine or butter into all ingredients except
milk. Add milk. Knead until you have a smooth dough. Add
almonds. Let dough rest for 30 minutes. Roll out dough and
use cookie cutters. Bake in preheated 350 degrees oven for 10 minutes
or until brown. Let cool 1 minute before taking Speculaas
cookies off of cookie sheet.
