    Blueberry Pie

    List of Ingredients

    I use a commercial cookie crust, but any kind of crust you like is just
    fine.
    Spread about 3 oz. of softened cream cheese in the bottom of the crust to
    prevent the berry juice soaking into the crust.
    Place fresh berries in a single layer over the cream cheese. With
    strawberries, it's pretty to place them with the points up. If blueberries
    are the old fashioned small berries we call huckleberries, you may want to
    use more than one layer. Top with the following hot glaze:

    1 cup mashed berries
    1 cup sugar
    1/2 cup or less water
    2 tablespoons cornstarch
    pinch of salt

    Cook the mixture, stiring constantly until thick and clear. You may want to
    add a little food coloring if you are using strawberries, but most berries
    don't need it. Pour the hot mixture over the fresh berries in the crust.
    Cool and top with whipped cream ( I use fat free Cool Whip)
    We like this better than any berry pie we find in any restaurant - they are
    usually made with some gelatin.
