    Dubliner's COLCANNON POTATOES

    List of Ingredients




    COLCANNON POTATOES
    Makes 5 to 6 cups.

    1 1/2 pounds red potatoes
    1/2 small head of cabbage, chopped
    3 scallions, chopped
    1 to 1 1/2 cups milk (divided use)
    2 tablespoons butter, melted
    1/2 teaspoon salt (more to taste)
    1/2 teaspoon black pepper (more to taste)


    Bring 2 quarts water in large saucepan to boil. Add potatoes and boil
    20 to 30 minutes or until potatoes are cooked and tender. Drain and
    cool until potatoes can be handled. If desired, peel away red skin
    and discard. Set potatoes aside. Bring 2 quarts water to boil in
    large saucepan. Add chopped cabbage and boil 10 to 12 minutes or
    until cabbage is tender. Drain and set aside. Place scallions in
    small saucepan and add just enough milk to cover. Cook over medium
    heat 3 to 4 minutes or until scallions are tender. Set aside. Place
    potatoes in large bowl of mixer (or food processor) and mash slightly
    with a fork. Beat at low speed, adding scallions and remaining milk
    gradually until desired consistency is obtained; then add butter,
    salt and pepper. Add cooked cabbage to mashed potatoes. Beat at low
    speed until well blended.
