    THE PERFECT BLT
    The simplicity of the ingredients at their tip-top
    best makes this homey sandwich a true classic.
    Ours highlights each element, starting with
    peak-season beefsteak tomatoes, large, crisp
    lettuce leaves, sourdough bread, thick-cut slices
    of bacon, and zesty mayonnaise with grated
    lemon peel.

    Prep time: 10 minutes
    Cooking time: 10 to 16 minutes
    Easy

    8 slices thick-cut bacon (about 6 oz.)
    1/4 cup mayonnaise
    1 teaspoon grated lemon peel
    1/2 teaspoon freshly ground pepper
    4 slices sourdough bread (1/2-inch thick), lightly toasted
    2 large green-leaf lettuce leaves, torn in half
    1 medium (6 oz.) ripe beefsteak tomato, sliced 1/2 inch
    thick
    Potato Chips (optional)

    1. Heat a large heavy-duty skillet over medium-high heat
    for 2 minutes. Add 4 slices bacon; cook 2 to 3 minutes,
    until golden brown. Turn bacon with tongs and cook until
    just crisp, about 2 minutes more. Transfer bacon to plate
    lined with paper towels. Repeat with remaining bacon.

    2. Combine mayonnaise, lemon peel and pepper in small
    bowl. Spread 1 tablespoon on each slice of bread. Divide
    and arrange bacon on 2 slices of bread; layer with
    lettuce and tomato slices. Place the remaining bread on
    top of the tomato. Serve with potato chips, if desired.
    Makes 2 servings.

    Tomato tip: Select ripe tomatoes that are fairly firm;
    remove core with a small knife. Hold tomato on its side;
    with serrated knife, cut into 1/2-inch-thick slices. If a
    tomato isn’t quite ripe yet, don’t refrigerate (cold retards
    the ripening process and robs the full tomato flavor).
    Always store at room temperature.
