Black Eyed Pea Confetti Soup [lo fat]

Black Eyed Pea Confetti Soup
1 cup chopped onions
1 medium yellow bell pepper, chopped
1 medium green bell pepper, chopped
2 cups finely chopped Kale
1/2 teaspoon chili powder
1/4 teaspoon cumin
1/8 teaspoon crushed red pepper
2 cans (14 1/2 ounces each) fat-free, low sodium chicken broth
2 cans (15 ounces each) black-eyed peas, rinsed and drained
Coat a large pot with cooking spray. Add onions and bell peppers; cook and stir over medium to high heat for about 5 minutes, or until onions are translucent. Add Kale, chili powder, cumin, and red pepper. Cook and stir for about 2 minutes, or until the kale is a vibrant green. Add the chicken broth and black-eyed peas. Bring to a boil, reduce the heat, and simmer for 10 minutes.
