    Easy, Healthy Vegetable & Bacon Soup

    1 or 2 Bacon Bones (to your taste)
    1 Garlic Clove
    1 Onion (large)
    1 Turnip
    1 Parsnip
    1 Zucchini
    2 Potatoes (large)
    3 Carrots
    3 Stalks Celery + leaves
    Pumpkin - Good sized chunk or to taste
    3/4 Cup Pearl Barley or Soup Mix - all the good
    healthy grains you need!
    Stock Powder - I use 'Vegeta' a veggie one
    Salt, Pepper
    Splash Olive Oil

    Peel and chop all the veggies to preferred sizes. Saute the onion in
    the olive oil, add garlic after a few minutes. Add chopped celery and
    carrot and saute together until softer. I also sprinkle in some stock
    powder and some water if it is all sticking (it adds a lovely flavor
    when it scoops up all the crispy bits!). I then pop in the bacon
    bone/s about a litre of water and the stock powder. Bring to the
    boil, pop in all your chopped up veggies, the soup mix and any further
    seasonings you may like i.e. salt, pepper, mixed herbs, chilli
    flakes.

    Once it boils again, reduce heat to low and allow to simmer for about
    an hour to an hour and a half. Make sure you keep stirring so your
    barley does not stick, and keep adding water as it reduces down.

    Remove the bacon bone, leaving all that lovely flavour... I then pop
    the soup into the blender, puree until smooth and refrigerate (once
    cooled) overnight. If you prefer your soup more rustic, just serve as
    is - minus the bacon bone. Although I make this ahead, its great to
    make on a Sunday afternoon as I can never resist a wee bowlful to make
    sure all is A.OK and then you have a simple Sunday supper. Reheat the
    next day with a nice warm, crusty bread roll and enjoy the healthy
    goodness (and no fat!).
