    Tomatillo Cilantro Chicken Soup

    List of Ingredients




    Tomatillo Cilantro Chicken Soup
    1 to 1 1/2 large onions, slivered
    1 1/2 sticks unsalted butter
    1/4 cup minced garlic
    1 to 1 1/2 lbs. tomatillos, husks removed and quartered
    2 cans (15-ounces each) chicken broth or homemade stock
    Salt to taste
    3 chicken breasts, boned and skinless
    1 bunch fresh cilantro, chopped
    2 cans (15 ounces each) creamed corn
    1/2 tablespoon black pepper

    Sauté onions in butter, add garlic and tomatillos and cook until soft. Add broth, salt, chicken breasts and cilantro and simmer for 30-40 minutes. Remove chicken and continue cooking soup for another hour. Shred the cooled chicken. Once the soup has cooked for an hour, add creamed corn, pepper and the shredded chicken. Serve hot.

    Note: If you have or can buy some homemade tamales, add one or two in the bowls before pouring in the soup.
