    ASPARAGUS STUFFED TOMATOES

    1 ripe but firm tomato
    4 or 5 slim asparagus spears (steamed until tender
    but not soggy) cut into 1/2 inch pieces
    1 Tablespoon bread crumbs mixed with a little melted
    butter to moisten
    1/4 teaspoon lemon juice
    1 teaspoon of finely chopped onion
    1 teaspoon of finely snipped parsley
    salt and pepper to taste

    cut top off tomato, scoop out the center (reserve for filling)

    filling: mix together the rest of the ingredients with the chopped
    tomato insides refill the scooped out tomato, and put in shallow
    baking dish that has been lightly sprayed with cooking spray. bake
    for 20 minutes at 325 degrees. it makes more than 5 ingredients- but
    you may top with a little cheese (mozzarella, crumbled blue, Swiss, or
    provolone are nice) serve with crispy rolls
