    LORETTA'S ZUCCHINI

    1 puff pastry sheet, unthawed
    2 small green zucchinis, thinly sliced
    2 small yellow zucchinis, thinly sliced
    1 sweet or red onion, sliced thinly or chopped
    2 ripe tomatoes, sliced thinly
    1/2 - 1 cup of grated cheese
    Parmesan cheese
    Your favorite herbs

    First, preheat oven to 425 degrees. Lay pastry out on cookie sheet,
    ungreased. Brush lightly with olive oil. Lay or sprinkle onions onto pastry.
    Layer zucchini onto onions in an overlapping manner, into rows of varying
    color. Next, lay tomatoes out over zucchinis. Sprinkle cheeses onto
    vegetables, using as much or as little as you like. (I use a small amount).
    Top with your favorite herbs, fresh and/or dried. Place in oven on lowest
    rack to crisp bottom. Bake until veggies are done and edges of crust are
    browned. Cut up and serve as main or side dish. Great as a light lunch with
    a side salad.
