    Turnip Greens and Corn Dodgers

    3 lbs. turnip greens
    4 cups water
    1/2 lb. streak-of-lean meat
    Salt to taste
    1 tsp. sugar
    1 1/2 cups cornmeal

    Thoroughly wash the turnip greens. Place 1 1/2 cups water and streak-of-lean
    meat in boiler and boil for 30 min. Place greens in separate boiler with 2
    cups water and parboil for 7 min. Pour off this liquid to remove btterness.
    Add greens to boiling meat and liquid. Salt to taste and cook for 45 min. to
    1 hr. or until greens are tender. Add the tsp. of sugar. Remove turnip
    greens fron stock. Prepare corn dodgers by taking 1 1/2 cups of cornmeal,
    adding 4 tbsp. of boiling water (more if needed so that meal will stick
    together), and shape by hand into small round balls so they will not fall
    apart. Have the stock from the turnip greens at a rolling boil, drop the
    cornballs in. Cook 15 min. When done, dodgers will be soft and pale green.
    Serve with greens.
