    Chicken Curry

    List of Ingredients




    No Eastern Recipe site is complete without CURRY!
    You can cook curry by buying instant curry sauce in bottle or the old fashion way...by scratch.
    Here's the list of ingredients you'll need:

    1 medium chicken - chopped into pieces
    3 tomatoes - chopped
    3 potatoes -quartered
    2 large onions - chopped
    2 cups of thick coconut milk (from 1 grated coconut or just buy the ones in packet off the supermarket shelves)

    GRIND TO PASTE:
    2.5 cm stick of cinnamon
    2 cloves
    3 cardomons
    6 black pepper corns

    GRIND:
    5 cm piece of ginger
    1 pod of garlic

    GRIND:
    6 dried chillies
    Small piece of tumeric
    2 tsps aniseed


    Oil
    Salt to taste

    Recipe



    Heat a bit of oil in heavy bottommed pan and fry onions until golden.

    Add in tomatoes and fry for a few minutes.

    Add in the Grounded paste (Cinnamon, cloves, cardomons, peppercorns) and fry for a couple more minutes.

    Add in ginger and garlic. Fry for 2 munites

    Add in Chilles, Tumeric and aniseed and fry well.

    Add in Chicken and fry. Stir well.

    Pour in coconut milk and potatoes.

    Leave to simmer till chicken is tender.
