    List of Ingredients




    1 c flour
    1 c whole wheat flour
    3/4 c gound flaxseed
    3/4 c sugar
    2 3/4 tsp baking powder
    2 tsp cinnamon
    3/4 tsp salt
    1/4 tsp baking soda

    4 egg whites
    1 egg
    1/2 c unsweetened applesauce
    1/3 c orange juice
    1/4 c canola oil
    2 tsp vanilla extract

    2 c grated carrots
    1/2 c chopped pecans
    1/2 c flaked coconut
    1/2 c raisins
    1 med tart apple, peeled and shredded

    Recipe



    In large bowl combined the first 8 ingredients. In another bowl beat the next 6 ingredients. Stir into dry ingredients just until moistened. Fold in remaining ingredients.

    Coat mufin cups with nonstick cooking spray or use foil liners. Fill 3/4 full. Bake at 350 degrees for 15-18 minutes oruntil toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pans/
