    A GREAT ANYTIME CAKE, MOIST AND SPICY

    List of Ingredients




    1 C Chopped pecans or walnuts
    1 C Margarine or butter
    2 C Sugar
    2 C Raisins
    2 C Water
    1 tsp. Cinnamon
    1 tsp Nutmeg
    1 tsp Ground Cloves
    1 T Grated orange rind
    1 T grated lemon rind
    3 1/2 C flour
    1 tsp Baking soda

    Recipe



    Mix everything except rinds, flour, and soda in a large stock pot. Simmer uncovered for 5 min. Remove from heat, let cool to room temperature. Add lemon and orange rinds. Mix in flour and soda. Pour into well greased and floured bundt pan or 2 loaf pans. Bake 350 for 1 hour or until top springs back. Cool in pan 10 min then remove to rack to finish cooling. This cake keeps well and also freezes well.
