    Yield 24 cupcakes

    List of Ingredients




    •1/4 cup of sugar set aside, we'll use that to make the filling at the end
    •1.5 cups of sugar
    •4 eggs
    •4 eight ounce packages of cream cheese
    •1 tablespoon of vanilla
    •1.5 to 2 cups of raspberries or other fruits

    We need to preheat the oven to 350 degrees.

    Mix the Cupcake Ingredients
    In a bowl, put three of our packets of cream cheese, the sugar, and the vanilla, and use a hand mixer to blend this together very well.

    Add just one egg, use the mixer to blend that egg in thoroughly, then repeat one egg at a time with the other three eggs.

    Fill the Cupcake Liners pour the cream cheese batter and fill each cup up about three quarters of the way up. Evenly distribute the raspberries. This makes 24 cupcakes.

    Bake in oven for 25 minutes. while that is baking make the topping for the cupcakes. Take the sugar we set aside earlier and the last packet of cream cheese and using a mixer, blend that together well.

    Once the cupcakes are done baking, cool for about five minutes. While these are cooling turn the oven up to 450 degrees. You'll notice a dimple forms on the top of each cupcake. After five minutes add a teaspoon of the topping to each of the cupcakes.

    Put the pan back in the oven and bake for five more minutes. Let those cool for a few minutes, but you want to refrigerate these for at least an hour before serving.
