    Makes 6 quarts

    List of Ingredients




    3 16 oz cans tomato paste
    6 Tbs olive oil
    6 cloves garlic, minced
    1 Tbs salt
    2 Tbs pepper
    3 Tbs dried basil
    1 Tbs dried oregano
    1 Tbs dried parsley
    1 Tbs sugar
    4 1/2 qts water
    1 lb groun beef, prk, veal or a mix (the beef makes a heavier sauce, the pork and veal make a lighter, sweeter sauce)
    Other meats such as meatballs, sausage, or pork butt

    Brown the meat and set aside in colander to drain the fat.
    Cover the bottom of a large stock pot with the olive oil and sweat the garlic (low heat) until soft. Add the tomato paste and water. Stir as the paste melts and mixes with the water over medium heat. Add all of the other ingredients except the meat. Stir, turn up the heat and bring to a boil. Lower th heat to a simmer and add the ground meat. Simmer and stir often over the next 2 hours and adjust seasonings as needed. Brown additional meats and add to the sauce.
