    Sesame Chicken Breasts

    2 teaspoons sesame seeds
    4 (4-ounce) skinned, boned chicken breast halves
    2 tablespoons honey
    2 tablespoons reduced-sodium soy sauce
    1/4 teaspoon ground ginger

    Recipe



    Place a large non-stick skillet over medium-high heat until hot. Add sesame seeds, and cook, stirring constantly, one - two minutes or until seeds are toasted. Remove and set aside. Flatten chicken breasts between sheets of heavy duty plastic wrap (using a meat mallet or rolling pin.) Coat skillet with cooking spray; place over heat until hot; add chicken & cook three minutes on each side, or until lightly browned. While chicken cooks, combine toasted seeds, honey, soy sauce, and ginger. After chicken browns add seed mixture to skillet, and cook an additional 3 minutes, turning chicken to coat with sauce. Serve remaining sauce over chicken.

    Serves 4
