    Cinco de Mayo Chicken Salad

    2 large whole chicken breasts, boned and skinned
    1/2 cup Pace Picante Sauce, mild/medium/or hot
    1/2 tsp ground cumin
    1/4 tsp salt
    1/4 cup low fat sour cream
    2 tbs reduced fat mayonaise
    1 cup sliced celery
    1/2-1 cup sliced green onions
    4 crisply cook bacon slices, crumbled

    Cut chicken in 1/2" cubes. Combine Picante sauce, cumin and salt in a skillet. Cook chicken in sauce until chicken is done. Transfer to mixing bowl. Cover and chill. o serve combine chicken mix, sour cream, mayo and mix well. Add celery and green onions. Mix lightly. Line 4 salad plates with lettuce. Divide chicken salad evenly on plates. Sprinke with crumbled bacon. Can serve with additional Picante sauce if desired.
