    Fried Corn Salad

    List of Ingredients

    8 ears corn
    4 Tbsp. butter
    2 c. black beans drained and rinsed
    4 scallions
    3 ripe plum tomatoes seeded and chopped
    ( I used halved grape tomatoes)
    1/2 red bell pepper diced
    3 Tbsp red wine vinegar
    1 tsp. coarse salt
    ¼ tsp. black pepper
    2 Tbsp. chopped cilantro or basil

    Recipe

    Shuck corn, then cut off cob, (you can use leftover cooked corn also). In a large pan, melt butter and fry kernels just until softened, 5-6 minutes. Place cooked corn, beans, scallions, tomatoes and red pepper in bowl.
    In a small bowl, combine vinegar, salt, and pepper, cilantro and/or basil and mix well. Pour onto corn mixture. Adjust seasoning to taste.
