    Mom's German Potato Salad

    6 potatoes
    1 onion finely chopped
    1 c chopped celery
    3 hard boiled eggs
    6-8 pieces of crisp bacon

    Dressing
    2 Tbs bacon grease
    1 Tbs (skimpy) flour
    1 c cider vinegar
    1 c sugar

    Recipe



    Boil potatoes until fork tender. Hard boil the eggs with the potatoes. Fry bacon reserving drippings.
    Peal potatoes when cool enough to handle. Cut into 1/4 inch thick slices. Mix gently potatoes, onion and and celery. Crumble bacon and add to potatoes.

    Measure 2 Tbls of bacon drippings and discard the remainder. Stir in the flour and brown slightly. Add the vinegar and sugar and boil gently until clear. Pour over potatoes. Best served at room temperature.
