    ORANGE FETA SPINACH SALAD

    An incredible combination of flavors! Definitely a hit! If you don't have kalamata olives, or don't like them, then just leave them out - do not substitute regular black olives (the flavor will not go well).

    List of Ingredients




    1 large Naval orange
    1/4 cup Citrus Vinaigrette (approximately; see separate recipe)
    8 cups Spinach leaves torn
    2 Scallions very thinly sliced
    1/3 cup Feta cheese finely crumbled
    16 Kalamata olives

    DRESSING
    2 tablespoons Fresh lemon juice (approx. juice of 1 lemon)
    1/4 cup Fresh lime juice (approx. juice of 3 limes)
    3 tablespoons Frozen orange juice concentrate
    1 1/2 teaspoons Red wine vinegar
    1 clove Garlic minced or pressed
    1/4 teaspoon Sugar
    1/2 teaspoon Salt
    Black pepper to taste
    1/2 cup Olive oil

    Recipe



    1. Peel the orange and separate the sections. Remove any course membranes, then cut each section in half and place in a small bowl. Toss with a teaspoon or so fo dressing, just enough to coat them lightly.

    2. Place the spinach and scallions in a large salad bowl. Just before serving, toss with approximately cup dressing, just enough to coat the leaves.

    3. Divide the spinach onto 4 salad plates. Sprinkle on the oranges, feta cheese, and olives. Serve immediately.
