Sesame Chicken Stir Fry Salad

List of Ingredients
Dressing:
1/3 C. Rice Vinegar
3 T. low sodium Soy Sauce
2 t. Sugar
1 clove minced Garlic
1 small piece minced fresh Ginger root
3/4 C. Olive Oil (or slightly less)
Mix all ingrediants together in a cruet.
Salad:
1 T. Olive Oil
1 lb boneless, skinless Chicken Breasts, thinly sliced
1 C. Carrots, thinly sliced
2 cloves minced garlic
1 small piece minced Ginger Root
2 T. Sesame Seeds
1 can (8 oz.) pineapple chunks, drained
1/4 C. Green Onions, sliced
1 pkg. (10 oz.) fresh Spinach LeavesRecipe
For salad; heat oil in stir fry skillet over medium heat. Add chicken, carrots, garlic, ginger root & sesame seeds; stir to coat with oil. Stir fry 5 minutes or until chicken is no longer pink in center. Put pineapple & green onion on top of a bed of spinach leaves in large bowl. Top with chicken mixture; drizzel on dressing.
