    Tomato Feta Salad

    List of Ingredients


    • 3 pints cherry tomatoes
    • 3/4 lb good feta cheese
    • 1 small red onion, chopped
    • 3 Tbs white wine or champagne vinegar
    • 1/4 cup olive oil
    • 1 tsp. kosher salt
    • 1/2 tsp freshly ground black pepper
    • 2 Tbs. minced fresh basil leaves
    • 2 Tbs. minched fresh parsley


    Instructions


    1. Cut the cherry tomatoes in half and place them in a large bowl.

    2. Dice the feta in 1/4 inch dice, crumbling as little as possible. Add feta to the tomatoes

    3. Add the onion, vinegar, olive oil, salt, pepper, basil and parsley.

    4. Toss carefully and salt to taste.

    5. Serve chilled or at room temperature.
