Warm Brie & Pear Salad with Raspberry Dr

3/4 lb bag baby spinach leaves
1/2 pound Canadian Brie
2 ripe pears, seeded and thinly sliced
Raspberry Dressing:
3 tablespoons raspberry vinegar
1/3 cup olive oil
1 tablespoon sugar
1/4 cup raspberries, mashed
Recipe
Whisk together dressing ingredients. Divide spinach onto 4 plates. Wrap Canadian Brie and soften in microwave at medium for 45 seconds, or in 400 degree oven for 5 minutes. Slice cheese carefully and place on salad. Arrange pear slices. Add dressing. Garnish with whole raspberries. Serve immediately. Serves 4.
