    Erika's Berry Special Cheesecake

    Recipe Introduction


    This makes an excellent, creamy cheesecake.

    List of Ingredients




    1 cup graham cracker crumbs (preferably Salerno)
    3 tablespoons sugar
    3 tablespoons Parkay margarine, melted (preferably IMPERIAL brand margarine)

    3 8-oz. pkgs. Philadelphia Brand cream cheese
    3/4 cup sugar
    3 eggs (take out in the beginning)
    1 teaspoon vanilla
    1 cup Kraft strawberry preserves or jam

    Recipe



    Combine crumbs, sugar and margarine; press onto bottom of a 9-inch springform pan. Bake at 325°F, 10 minutes. Increase oven temperature to 450°F.

    Combine softened cream cheese and sugar, mixing at medium speed on electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Blend in vanilla. Pour mixture over crust; bake at 450°F, 10 minutes. Reduce oven temperature to 250°F, continue baking 25 to 30 minutes or until done. Loosen cake from rim of pan; cool before removing rim. Chill. Before serving, top with strawberry preserves or jam.
