Garbageman Cookies/Dipped Gingersnaps

Recipe Introduction
Every Christmas season at work we are treated to these absolutely DEE-licious cookies. Our garbageman "Dan" brings them in for us compliments of his wife. Try them out. I promise, you'll be hooked! MMmmmmm!
List of Ingredients
2 cups sugar
1 1/2 cups vegetable oil
2 eggs
1/2 cup molasses
4 cups flour
1 tablespoon ground ginger
1 teaspoon salt
4 teaspoons baking soda
2 teaspoons ground cinnamon
additional sugar
1 package of white bark or 1 pound white melting chips (NOT the cheap stuff!)
Recipe
Combine sugar and oil, mixing well. Add eggs one at a time, beating well after each addition. Stir in molasses. Combine dry ingredients and add slowly to creamed mixture. Mix well. Roll into 3/4" balls and roll in sugar. Place 2" apart on an ungreased baking sheet. Bake at 350°F for 10-12 minutes or until cookie springs back when touched. (Watch closely at the 10 minute mark!) Remove to wire rack and cool. Melt white chocolate and dip cookies in half-way. Shake off excess chocolate and place on waxed paper to dry. Makes about 14 dozen.
